Christmas Eve Dinner At Mom & Dad's

Man oh man. I may have been sick when I went over to mom and dad's for dinner Christmas Eve, but boy did mom turn things around for me! I had an appetite like I hadn't had for weeks!

Sergiy is leaving for Ukraine on Christmas Day so mom wanted to make sure we had a nice gathering before he left. I had the opportunity to give mom, dad and Mike their gifts.

Started with a bunch of little bites...stuffed mushrooms...

...drizzle of olive oil and topped off with cheese.

Japanese style potato salad ala kewpie mayo and vinegar...

Filling for the cheese and scallion empanadas...

goes in the dough...

gets tucked in and then

gets deep fried.

A little sweet and a little savory, the cheese was super melty and the sugar just gave it that extra special something.

Squeezing the limes for the salad...

peppers, mango, cilantro, tomatoes, cucumbers, lime juice and olive oil...this was so refreshing and SO delicious.

More olive oil and shallots...

for the clams and white wine!!!!

And we had fresh baked bread to sop up all the juices.

Seasoning the J-U-M-B-O shrimp then into the oven, left to...

bake into this. YUM.

Heating up mom's "famous" meatballs (my absolute favorite thing growing up). These babies are made of veal, beef and pork. Sauce is obviously made from scratch.


I almost always request her spaghetti and meatballs on my birthday.

The pork shoulder is the other family fave...

so juicy, moist, tender and flavorful.

Mom makes marinated red onions and homemade hot sauce for the pork.

And there was plenty of champagne! Yay! It was a very merry, magical day! Hope yours was great too.
